Here is my most favorite ever pie recipe. The crust is crispy and soft at the same time, there is very less sugar but it still tastes like a dessert, and it is totally allergy friendly.!
Ingredients:
Crust:
- 3 cups – almond flour
- 1 cup – cassava flour
- 1 1/4 cup – coconut sugar
- 2 tsp – salt
- 1/3 cup – organic date syrup
- required amount water
Filling:
- Purée from one medium sized pumpkin (more if wanting bulging top)
- Salt to taste
- 1/4 cup (or more) maple syrup
Step Number One: The first thing we have to do is mix together all of the dry ingredients for the pie crust. We will also have to bake the pumpkin so that we can use it for the filling. If you dont want to bake your own pie, you can use pumpkin puree. To bake a pumpkin, cut it in half then put it in the preheated oven at 400 degrees Fahrenheit. You will have to bake the for 45 to 60 minutes, or until it is cooked. You will know it is cooked when you put a fork in it and it goes through cleanly. if it is still hard then cook for longer. You need the pumpkin to be soft and easy to remove from the shell/skin. Then use a fork and scrape out the inside while still hot. Lastly you can set it aside until we have to make the filling.!
Step Number Two: Next, add the date syrup into the flour and use a fork or your hands to crumble and mix well. After you have crumbled the date syrup with the flour, then you can start adding the required amount of water to turn it into a nice soft dough. If you add to much water, then you can add more cassava flour. Do not add more almond flour as it will make the dough crumble, so you should add more cassava flour if needed.
Step Number Three: The next step for the dough is to put it into your pan. For a gluten pie you will have to roll the dough and then add it into the pan, but for this dough since it does not contain gluten you will not roll it instead we will be patting it into the pan. The baking pan I am using measures 9 inches by 9 inches. After you pat in the dough you will need to trim the edges. Make sure to save the edges because you will need them to cover the top.
Step Number Four: Now we are going to make the filling. To make the filling, we are going to mix together all of the filling ingredients listed above. I like to mash the pumpkin really well before filling my pie with it. I found out that this makes all of the juices of the pumpkin really mix together with the maple syrup verses just mixing it with a spoon. Next we are going to use the scrape pieces from the sides and you can cover the pie how ever you wish. I just rolled them into strips and pushed them onto the surface of the pie. Now we are going to bake the pie at 350 degrees Fahrenheit for 25 - 35 minutes.
