Einkorn Sourdough Focaccia Bread

Ingredients:

  1. Crust:
  2. Einkorn whole wheat flour – 3 1/4 cup
  3. Einkorn sourdough starter – 1/4 cup
  4. Olive oil – 1/2 cup
  5. Water as needed
  6. salt to taste

Toppings:

  1. Marinara sauce – 1/4 cup
  2. Cut cherry tomatoes
  3. Fresh basil
  4. 1 cup cheese
  5. Italian seasoning
  6. Other vegetables to choice
Step one:
First we are going to mix together the einkorn sourdough starter, 1/8 cup of water, and only 2 tbsp of the olive oil. Mix together vigorously until the olive oil and water is sort of dissolved into the starter. Here is also when we are going to preheat the oven to 400 degrees Fahrenheit. 
Step two:
Add in all the flour and mix with a fork until you can, and then get in with your hands. After you mix it add as much olive oil as needed. This is a dry dough so you will get a good workout kneading the dough. After that, cover the dough and set aside for 4-6 hours. 
Step three:
After 4-6 hours, remove the lid and knead the dough for 15 seconds, with 1 tbsp of olive oil, and then put into a 9 inch by 11 inch pan. Then poke holes, with your fingers, that go only half way through the dough. Do not poke holes that go all the way through the dough. After you do so, make a mixture with 1/8 cup of water and 1/8 cup of olive oil, and pour the mixture over the holed dough making sure get the olive oil into every one of the holes. 
Step four:
After you do so, it is time for the fun part; add the toppings.! Here is where you really get to go all out and do whatever you want just like a pizza. Here I decided to make it full Italian and I added cut cherry tomatoes and fresh basil. I also added a garlic Italian seasoning which I have linked in my YouTube video on how to make this focaccia bread. Make sure not to add the cheese at this stage and I will tell you why.
Step five:
Now we are going to put this in the oven which we have preheated to 400 degrees Fahrenheit for 20 minutes. 
Step six:
Once the focaccia is out of the oven, the bread will still not be fully cooked but we have to put it back in the oven for ten minutes. Before we do so we have to add the cheese. I used 1 cup of mozzarella cheese but you can use any other type of cheese you would like. Now we are going to put the focaccia back in the oven for another 10 minutes. The reason we don’t add the cheese in the beginning is because the cheese will burn quickly, especially mozzarella cheese since it is made with enzymes not rennet. 
Step seven:
now that the focaccia is out of the oven, the last step is to dun dun dun!!!... EAT IT!!! Seriously, you have done your work and it is time to enjoy your lunch/dinner.
